This was incredible and I am NOT a minestrone fan. I usually do not have Parmesan Rind on hand as my husband does not like Parmesan cheese. So I bought a hunk of cheese with the rind just for this soup. I wonder if I can just cut a 1 oz hunk of the cheese and add it to the soup rather than using the rind, or can I reuse the rind (after freezing...
