Reviewed Mushroom and Mustard Spaetzle

this is a very good, basic, and pretty traditional Spaetzle recipe. It's also pretty much fool proof and not as time consuming as you might think. The basic Spaetzle can be used in a lot of different recipes as well, and not just with the excellent cream/mustard sauce.

Very good, basic schnitzel recipe. You can use it on chicken, veal, etc. too. On the TV episode he used Italian Crumbs. If you use plain crumbs, maybe add some more seasoning. I used plain and some hot paprika. "

Reviewed Spaetzle

This is a good, solid, traditional Spaetzle base. I added a bit of Nutmeg, but that was the only change I made. I don't like fancy or modern twists on the basic dumpling/noodle and this recipe is just right.

I have used the dough in a potato ricer and it worked great. But, it also works ok using a flat grader or colander too.
