"I have never had eggplant parmigiana before (and actually I have never been a fan of eggplant), but after seeing this on the show, I had to try it. I am so glad I did! Absolutely delicious and fairly easy to make. I halved the recipe (one eggplant) and used an oval shaped 2 quart casserole dish. I skipped a step and used a jar of "four cheese""
