Update on flavor: very good. I would cut down a little of the ricotta and add feta cheese. It just goes well with the spinach and olives. It will also add saltiness so maybe cut down a little on the salt if adding feta. But as I said below, definitely either half the filling recipe or split the filling in half and make two tarts."
