Reviewed Vegetarian Enchilada

"I altered this recipe a lot but I cook it once every two weeks now and it is always a huge hit. I use a wok to cook the vegetables because of the size and only 1 yellow bell pepper. I also add the potatoes before the zucchini (they take longer to cook even when diced small. I add: cumin, cayenne pepper, chile powder and 2 serrano peppers (I like it spicy and on top at the end I sprinkle sliced jalepenos.

I also make my tortillas (about 10 of them medium. After filling them I put them in a casserole dish and throw the remaining veg on top with the sauces.
Serve with sour cream, black beans, avocado, spanish rice (you can make this with some of the leftover bell peppers, and a fresh pico de gallo (tonight will be roasted corn salsa and you are set! A good 3 hours work but insanely worth it.
