"WOW! Just made this for the second time in the past two weeks. This is one of the easiest and most delicious dishes I have ever made. The success of this truly lies in a QUALITY piece of meat, which costs a pretty penny but is well worth it. "Just made these for supper and they were very good. I really liked the dressing, but I wished it were a little bit thicker. It kept dripping everywhere we were eating them. I would definitely make these again and maybe even try with shredded chicken instead of shrimp. This was a fantastic low-cal/low-carb recipe that the family felt healthy eating!

"Just used this method to make chicken saltimbocca. Replaced veal with chicken and then made a pan sauce using shallots, white wine, chicken stock, capers and tomatoes. Let simmer a couple minutes and then add chicken back in to finish cooking. After a couple minutes, remove chicken, run a pat of butter through the pan to finish the sauce. Absolutely delicious!

"Just made this and it is delicious! I added chicken-flavored couscous to bulk it up and its just wonderful. I also upped the amount veggies and added a slash of lemon juice, which really woke up the flavors. This is SO fresh-tasting! Can't wait until tomorrow when it will be even better!
