I omitted the ancho and pasilla chiles because I figured it would just be way too spicy for my taste, and did not use the cinnamon stick. I made the recipe using a 1 lb pork tenderloin and fixed the recipe accordingly - since it's just me and my husband, we don't need all that food. The flavor was fantastic!!
