Reviewed Chicken Parmesan

Jan 14, 2014 on FoodNetwork.com

This was my first time making chicken parmesan. I used Giada's simple tomato sauce recipe (delicious). I only used the cutlet recipe and I have to say that the breasts really need to be very thin or cooked longer than 3-4 minutes. What I did like was the pank/parmesan breading...I will take that from this recipe but still looking for something healthier....

Reviewed Grilled Tilapia with Lemon Butter, Capers and Orzo

Jan 7, 2014 on FoodNetwork.com

Absolutely tasty recipe but half a star off because it's NOT that quick but love this recipe because it uses basic staples that one would probably have on hand. .As usual, I had a few modifications: 1) I added garlic to the butter sauce because I add garlic to everythig (minced garlic) and it was GREAT.2)i didn't have a grill so I had to pan sear...

Reviewed Chicken Piccata

Dec 7, 2013 on FoodNetwork.com

This is a fabulous recipe, quick and easy. Made a few changes that have taken it from 4-star to 5-star: 1)there is no need for 6 tablespoons of butter, make it two and add them at the end of the sauce 2) season the chicken with white pepper and adobo in addition to salt and black pepper, 3) cook chicken with just olive oil, 4) drain oil, leave a...

Reviewed Salmon Baked in Foil

Oct 21, 2013 on FoodNetwork.com

I wasn't that impress with this recipe at all....even after adding garlic and some hot pepper, it seemed to lack any depth or flavor. It SMELLED amazing, it LOOKED amazing...but was just ok when I ate it. I was looking for an alternative to my normal way of cooking salmon (olive oil, lemon, dill, salt, pepper) but this was no better than what I can...

Reviewed Double Blueberry Muffins

Oct 7, 2013 on FoodNetwork.com

This was an extremely easy recipe to make (I didn't have enough blueberries, but it still came out good) and they are absolutely delicious!! Two changes that I made: added a little fat free half and half for 1/2 of the skim milk and used cinnamon sugar (McCormick) plus nutmeg for the top. Perfection!

Reviewed The Baked Potato

Oct 5, 2013 on FoodNetwork.com

Wow, this is the only way to bake a potato. Very simple, very easy....the skin comes out crispy and the insides absolutely moist and soft. hardly any reason to add butter! I didn't have a russet so I used a regular eastern...came out pretty good, but I know a russet would be amazing. Either way, no fail recipe...what a difference! never use the microwave...

Reviewed Shrimp Fried Rice

Sep 27, 2013 in Food Network Community Toolbox on FoodNetwork.com

I made this recipe before and it lacked excitement and vegetable and excitement so I revised it and made it over...AMAZING!!!
First off, I added one extra egg white, 3/4 lb shrimp, didn't use sesame oil (just grapeseed the whole time) and used Minute Microwavable Jasmine rice cups (2).

I then added 3/4 cup green cabbage,...

Reviewed Healthy Spicy Steamed Baby Bok Choy

Sep 26, 2013 in Food Network Community Toolbox on FoodNetwork.com

I love bok choy, but found this recipe to be a little boring...even after adding a chili paste and garlic. Also didnt have spicy sesame oil so maybe that makes a big difference. I didn't think the lime/soy sauce mix was complimentary to bok choy."

Reviewed Portuguese Chicken, Lemon and Mint Soup

Sep 26, 2013 in Food Network Community Toolbox on FoodNetwork.com

I love this soup, but with a few revisions. I made it twice before and it seemed to lack depth so last night I tried the following and it was amazing. Use a red onion. Add a leek (just the white part with 1 inch of green), use the grated lemon zest of 2 lemons, add a little extra mint, 1 sprig of rosemary, 3 sprigs of thyme, 4 potatoes, some baby "

Great base recipe for turkey chili. Just a few suggestions that would make it better/changes that I made: -add extra garlic and/or garlic powder. -used canned wdole organic stewed tomatoes because I like chunks of tomatoes, this was great (undrained)
-added canned corn, definitely a must in this recipe -SPICE LOVERS: add the following and...

Reviewed Halibut with Lemon-Butter and Crispy Shallots

Sep 1, 2013 in Food Network Community Toolbox on FoodNetwork.com

Very quick and easy. Could do without the lemon butter and its just as good. Also, I think you could use half a stick of butter and end up with a good amount of sauce for all pieces. I didn't have shallots so I used a red onion and it was great, but maybe not as crispy. Still delicious! Pair with red potatoes or broccoli. Highly, highly recommende"
