This soup was delish, very creamy and thick. however, i used half the parmesan. Definitely a keeper!

I've made it twice. The first time the carrots did not cook long enought to tender as stated 2mins in the recipe. So the second time, I added a bit of chicken stock and simmered for about 10 mins so that the carrots had a chance to soften. I also added celery with the stock. Then I became a bit more creative by adding a 1/2 pound of cooked chopped...
