Reviewed Quick and Spicy Tomato Soup
"I've made it twice. The first time the carrots did not cook long enought to tender as stated 2mins in the recipe. So the second time, I added a bit of chicken stock and simmered for about 10 mins so that the carrots had a chance to soften. I also added celery with the stock. Then I became a bit more creative by adding a 1/2 pound of cooked chopped beef. I seasoned the meat and made sure the beef was fully cooked when I added it to the soup along with the pasta. I also used the 32oz of chicken stock. A bit more than recommended and still it came out great!
