The Key is to pour a small amount of the cream (maybe a cup and a half or so) VERY SLOWY into the eggs first while constantly stirring, then pour that egg/cream mixture back into the pot of remaining cream. It's always best to run it through a strainer as your'e pouring it back into the pot to remove any coagulated bits that might have been created...

Is it possible you were cooking on an electric cooktop? The heating mechanism stays hot for a while, which can overcook the eggs... either that or you didn't use LARGE eggs. If using an electric cooktop, try removing it from that burner once you cover it with the lid. That should do the trick.

Well said! I have the same pet peeve. At least follow the recipe EXACTLY before you comment and suggest changes.If you didn't follow the recipe and it turned out badly, don't complain about the end result.

The recipe tells you to bring to a boil and then reduce heat to a simmer. It will not thicken at a simmer, you actually have to keep it at a pretty good bubble so it reduces. As it reduces it gets thicker. Try it again and see what you think doing it this way instead.
