Fantastic enchilada recipe with a great tomatillo taste. Splurge on good quality tortilla because they need to hold up to being baked in copious amounts of sauce. Seemed like too much sauce but it takes its place among the enchiladas. Changed my opinion about enchiladas forever.

This coleslaw is fantastic. Leave it in the fridge overnight to meld flavors. Love the extra seasonings and veggies. Perfect ratios. I like to use bagged, shredded cabbage though to simplify preparation.

Somewhat weird combination makes for a tasty and quick dinner. Definitely a different-tasting way to cook bone-in thighs. I love the sauce; it's great with rice. This is a cheap, tasty dinner.

Reviewed grilled salmon with a pineapple, mango and strawberry salsa

This dish was fantastic. The mango salsa stole the show though. The recipe for Essence created way more than I will ever use. The spiciness of the fish added to the salsa makes this dish a tad hot in a surprising way. Next time I'll make the salsa ahead of time and let it sit to meld flavors; it's even better the next day.

Reviewed fruit pizza

Made this for a treat dinner recently. Very tasty with an adjustment to the sugar in the frosting, I used 1/4 cup sugar instead of 1 cup but the whole pizza was a sugar bomb anyway. There is also almost too much fruit to fit on this pizza. I like the idea of this but it was just too sugar-y. Probably great party fare. Not bad at all on the whole;...

Reviewed Good Eats Meatloaf

I left out the carrot and used bread crumbs instead of croutons but this meatloaf was fantastic. Best meatloaf I have ever eaten and the glaze is to die for. There is nothing I would change but I do remember that my meatloaf took about 15 minutes extra in the oven to cook through. Thanks Alton, everybody loved this meatloaf."

Reviewed Herbed Egg White Omelet with Tomatoes

This recipe spawned a fantastic whole egg omelet with balsamic vinegar on the tomatoes instead of cider. I also added a little bit of turkey. The parsley addition was fantastic as well as the idea to broil on high for a little bit.
Very tasty meal. I am sure this meal would be just as tasty without the alterations."
