EXCELLENT! My Mexican potato salad is similar to this recipe; I used 4lbs. of potatoes and did not add the tomatoes, cayenne pepper or garlic to this dish; you have to add all the mayo though! I always add extra cilantro to my salad and I also topped it with smoked paprika. Delicious! "
