Reviewed White Bean and Roasted Eggplant Hummus

"5 stars for versitility. We ate this hummus as usual for 2 days, (spread on veggie sandwiches, dip for vegetables and spread on toast) then I put the remaining in a saucepan, slowly added chicken stock on medium heat, added some cayanne and black pepper and had an awesome soup! :"

About Me

I am a single mother in nursing school and I love to cook. We are from the western part of the country California and Colorado) but now live in The Deep South! I have only recently gotten dish television and I'm addicted to the food network. (I watch as a treat during study breaks.) My daughter is 14 and we are "mostly vegetarians", we eat fish and just added free-range chicken and turkey within the last couple of months. We did this for health reasons, because often in the south, the only protein on the menu that we could eat, would be some deep fried fish, and potatoes or rice. Even the greens are soaked in animal fat and the salads are topped with bacon and (pickles.?) Although, I do most of the cooking at home, with a busy and social life, you do have to eat out sometimes.

We love Tofu and love Indian food and Thai food. I love to experiment with healthy recipes. You will always find in my kitchen: quinoa, black and white beans, cilantro, cumin, garlic, pomogranate juice, mushrooms, fresh spinach, soy milk, soy beans, fish, and about 4-5 kinds of cheese.
