This recipe is excellent. I have made it several times for my family and all of us enjoy it. It is sweet and savory and compliments the tenderness of the loins wonderfully. I can understand that one may think that the recipe calls for an excessive amount of shallots, and that may be true. I normally cut back the amount to 7 or 8 when cooking this "
