Excellent flavor.....an exciting twist on mac & cheese. I shredded the cheese....and I did not layer. I put the chicken mixture and the macaroni into the bechamel and tossed it til blended and then spooned it into a casserole. I used 2% milk instead of half and half.....and still it was rich and delicious.

I used good extra sharp New York cheddar and added a little tabasco sauce. 12 ozs of grated cheddar is not very much but if you use 12 ozs of solid cheddar and grate that, it makes for more cheese....

Earthy delicious soup - easy prep. Beans take a little longer but it's worth every step. Easily adapts to vegetarian and still just as yummy. Substitute 2 tablespoons of butter for the pancetta. Use vegetarian broth instead of chicken. My guests loved it and went for seconds.
