Reviewed Italian Mini Meat Loaves with Mac and Three Cheeses
"I could never make a good meatloaf before this recipe. I make this all the time now. I usually leave out the bell pepper and onion because I usually don't have them on hand but it still comes out awesome! And I also don't coat the loaves with the olive oil because it comes out too greasy for my taste. I just spray the pan lightly with cooking spray and wipe before placing the loaves in so they don't stick. The last couple of minutes of cooking I add some ketchup to the tops of all of the meatloaves. I love that everyone gets their own little loaves. Great for kids and easy to save leftovers too!
