"I waited until I tried the recipe before commenting, so this rating is real -- at least for my taste and for people I would typically cook for. The idea is great to use a tortilla -- it makes a great vessel -- can be eaten in your hand as a muffin or cut up if desired, and the recipe leaves the door wide open for variation of Mexican leftovers -- I'm going to try shredded chicken with refried bean sauce next. It will be great to take to a potluck since it tastes good at room temperature. It was also good rewarmed in the microwave so will work for an on-the-go breakfast during the week. If my sons were still home with their groups of friends, I would be making some "Taco style" and serving them in the evenings for a snack. Thank you Melissa for a very practical, inexpensive, and yummy recipe.

As far as the previous comments and ratings that have nothing to do with the FOOD -- some people just need to get a life. Me, I appreciate the recipes ideas being shared.
