"We loved these cupcakes except the frosting was a little to sweet for us and I only added 2 1/2 cups confec sugar instead of 3. Loved loved loved the filling and the cake was so moist. I think next time I will make the filling into a frosting and omit the butter cream, not a big fan of butter cream anyways. :). ""
Reviewed Peach French Toast Bake
"Made this for Easter Breakfast. My husband and I both enjoyed it. My husband said it was especially good for diet, meaning no butter and little sugar. It did taste a lot like bread pudding:). I really liked the peaches. I think without the peaches it would be extremely bland. Also, I think rasisins would be another good touch. "
"So I am a first time maker of Red Velvet cupcakes. I followed the changes 1 cup veg oil, 1 1/2 cup buttermilk, but I used 3 tsp of dark chocolate cocoa powder. They are awesome. I also only used half of the topping and it was just the right amount. I also refrigerated the icing. Before refrigerating the icing was very buttery tasting and after it tasted great and a lot like cream cheese and not so much like butter. I gave the cupcake a 3 star because I did make changes, but I will most definently use this recipe anytime I make Red Velvet cupcakes. :)
