Truly wonderful flavors and low-cal!

I bought refrigerated grapefruit slices to save on time, and just used 1 part OJ + grapefruit juice to 2 parts EVOO for the dressing.

Next time, we might try adding some diced fried bacon on top (making it not so low-cal).

Paired this chutney with a different (healthier) recipe for "air-fried" pork chops. Substituted dried cherries for the golden raisins... The chutney is both spicy and sweet and such a wonderful way to use up pears! Definitely recommend.

Yup, it's amazing. I placed two table knives on each side of the potato to keep my knife from cutting too far down. I scaled this recipe back for just 2 people... I recommend 1 slice of bacon per potato, and just halve the butter + fixings (why is it when you scale back a recipe, you always still more sauce than is mathematically correct?!?).
