I LOVED the filling. My family HATED the eggplant, but I tried to 'cook' it in the oven, so it was kind of chewy and funny. Want to try again grilling it outside. But tonight we took the filling and tossed it with mini shell pasta, HUGE success! Will keep the recipe, both ways.

I DVR your show, and saw this recipe last night. Made a double batch, and my family went NUTS! So I took some up to a couple of college girls who go to school here, but call Juarez home. They were texting me right away and said it tasted just like their moms. They were in heaven has it has been 4 months since they last had a true taste of home....

Wasn't bad, wasn't great. Didn't have as much flavor as I thought it might. I did have one kid who had a FIT I used grapefruit in it, so think I would use orange juice next time....yes I would make it again, and possibly double the spices.

OH MY GOODNESS...OH MY GOODNESS! Delish! I would ease off a bit on the cumin, but that is just personal. I put in a bit more ginger on accident...but LOVE ginger! Mixing left overs with rice for my lunch tomorrow. All 3 of my kids enjoyed it too!
