Reviewed Grilled Chicken Pitas

"This is a great alternative to fajitas (which I love). I've made it a couple of times and everyone (including really young kids) LOVE it! I also didn't pre-make the sandwiches. Instead I created a "make your own sandwich bar" which is fun for the kids and the adults as well. The yogurt sauce was a big hit (especially my 2-year-old neice who was dipping everything into it). I think that people really enjoy the "make your own" thing.

Reviewed Orzo Stuffed Peppers

"This was a pretty good recipe, though as some of you have said, it lacks some flavor. I LOVE the orzo over rice. The second time I made it I added some lean ground beef and some Campbell's cream of mushroom soup (that was kinda by accident :p) as well as a little worchestershire sauce for a little more salty flavor with a dash of Tabasco.

Reviewed Meatless Shepherd's Pie with Horseradish-Cheddar Potatoes

"When I made this for the family (Mom, Dad, Bro, Sister-in-Law & their kids), I also made a traditional Shepherd's Pie with meat, just in case. The kids weren't fans (but they're 4 & 2) but all of the adults LOVED it! My sister-in-law liked it better than the traditional and she loves meat! Also, my brother practically barfs at the mere mention of mushrooms and he raved about it! I definitely cut down on the horseraddish though, since it's such a prominent taste. I also added some low-fat cream cheese to the potatoes to make them even creamy-er. WOW - thanks Rach!!!

Reviewed Garlic Mashed Potatoes

"I LOVE these and they are SO easy!!! I use a garlic press when I make them to avoid the chunks which turns the garlic almost into a paste, so I don't have to worry about someone biting into a giant chunk of garlic. I also use a little less butter and skim milk to cut some calories. But then I throw in some low-fat cream cheese (which I also add to regular smashed) which really kicks up the creamy-ness of the dish. I'm constantly asked to bring these to family events. YUMMMMMMMMMMMMM!

Reviewed Mini Phyllo Cups Filled with Shrimp Salad

"The shrimp salad is delicious. I often add some extra spices to "kick it up a notch" as someone said below. I've found that the frozen, pre-made phyllo cups tend to be a bit dry, so when I use them I oil them and put in plenty of parmesan cheese on the bottom to give them more taste. I've also served the salad on cucumber slices (English) and on endive leaves to mix things up a little for interesting apps. So easy to make and you can make it the day before. As an event planner that's definitely a plus! PS - I'm SO making the sandwich with the spinach & bacon for lunch one day! Sounds great!

Reviewed Tomato, Mozzarella and Basil Bruschetta

"This super easy bruschetta is DELICIOUS! The thing that really makes it stand apart from your everyday, run-of-the-mill bruschetta is the fresh mozzarella. The fresh basil also offers a nice refreshing taste. Also, you can make the tomato mixture the night before which makes "game day" so much easier. Simple, fun and scrumptious!

Reviewed Lobster and Avocado on a "Flower" Tortilla

"This is such a hit at parties! The decadence of the lobster makes these apps feel really "fancy". And the beauty of it is that you don't have to use a ton of lobster to make a bunch so it won't break the bank. I make my guac a bit differently, but the spicy sour cream really makes this app pop. Also, the added touch of crisping your own tortillas as opposed to using a bag of chips is terrific. I always get complimented on this one!

Reviewed The Ultimate Lasagna

"This recipe is absolutely DELICIOUS! My sister-in-law who is a total foodie said it was the best lasagna she's ever had! It is pretty time consuming, but super easy and it makes such a difference making your own sauce as opposed to pouring it from a jar. Also, either get a really deep lasagna pan, or (as I do) make two lasagnas. It makes a TON!!! Thank you Tyler - whenever I make it (and give one to my sister-in-law) I look like a true chef! YUMMY!!!!

I've been working in event planning and corporate sponsorships for 15 years and recently started my own business which includes catering.  I watch the Food Network almost exclusively and when I'm cooking, I talk to myself as if I were hosting my own show!!!
