Very tasty dish. DH really enjoyed it but I think I would have liked a little heat to it. I used basmati brown rice. I think the recipe should say that 2 cups cooked rice is needed. Loved it! The recipe was scaled back to 2 servings and made a delicious low carb dinner for the 2 of us. I did use your suggestion and sautéed the mushrooms.
