Yikes!! These were weird. Too sour and eggy. They weren't fluffy and light. Followed the recipe to a T and was not satisfied with the results. Tossed them in the trash. Traditional buttermilk pancakes blow these away by a long shot. Went back to my buttermilk pancake recipe (The Texas Experience Cookbook), and boy was I was in pancake heaven again....

It was good as a side dish. Can't imagine it as a main dish. Pay attention to the amount of servings it makes! I made the whole thing and had to freeze half of the meal (we are a family of 4). Lastly, it definitely needs more than 1 teaspoon of salt. Overall, pretty darn good. "
