My Activity

Reviewed Salmon in Lemon Brodetto with Pea Puree

"Even though the reviews I read were so positive, I didn't think this was going to be that big of a hit. Was I ever wrong! My husband was seriously over the moon when he tasted it. After every bite he complimented how awesome it all was. He kept saying that it was one of the best things I've made...and I've made some good stuff. A huge plus is that it is super easy to make and healthy. Next time, I'll have some bread on hand to sop up the juices.

Reviewed Butternut Squash and Apple Soup

"This is really, really good and really, really easy. It was a hit! I was pretty nervous to make this since my husband cringes at the word "squash" but much to my surprise, he loved it! He even took some to work today. I cut the recipe in half and still made more than enough for the two of us. Like some others, I did half apple cider and half chicken broth at the end and garnished with a dollop of creme fraiche. This was the perfect starter to a main course of grilled steak and roasted veggies.

Reviewed Berry Scones with Orange Honey Butter

"A-M-A-Z-I-N-G! This was an instant favorite and to this day, the most requested (and talked about) recipe I make. Like the other reviewers, watching the cream turn into butter is pretty awesome. We have a Vitamix blender and it took about 2 minutes and no mess to make the butter and the get the buttermilk. And after the scones were gone (all the first day), the butter went a long way. Next time I will only use 1/2 quart of heavy cream since I don't need to keep THAT much delicious butter around.

Reviewed Rustic Apple Pie with Dried Cherries

"I followed the recipe to the letter and it came out perfect. The crust was perfectly cooked and the apples and cherries were perfect together. The honey glaze was also a nice touch. My husband took one bite and threatened to eat the rest of the whole pie. I found the recipe super easy and again, it came out perfect. I served the pie slightly warm (close to room temperature) and with a scoop of vanilla nonfat frozen yogurt. I think the yogurt really balanced out the flavors. I will be making this again for everyone I know!
