"This was great! I was worried that the sauce would "break" because of the low-fat, but not the case. I used half parm and half romano, because that's what I had on hand. Definitely a keeper!""
Reviewed Roasted Red Pepper Dip
"Delish!!! Reminds me of pimento cheese. My 4yr old, 2yr old, and hubby loved it! It doesn't need anything....perhaps the other reviewers didn't add enough salt. As far as the texture, ricotta is different, it's not going to get smooth. I would not sub sour cream for ricotta. However, if you have to add something, I would try a little cream cheese. I think it's great as written....it's wonderful with tortilla chips and would probably be great on toast too. Thanks Rach!!!
