For goodness sake, do recipes really need to tell the cook not to burn the food? Did you just stand there and watch it happen? This low review is unfair except, perhaps, as a review of your kitchen skills.

Bolognese is supposed to be thick, wet but not really runny. If you want runny, buy a jar of "spaghetti sauce" from the supermarket.

This recipe is dreadfully unhealthy so I substituted low-fat margarine, carob chips, non-fat milk, and, of course, left out the salt. They just didn't have much flavor. Something is wrong with this recipe!

Paul is, indeed, wrong. The preparation of gravlax, at least if done traditionally, does not involve the use of vodka except, perhaps, as a restorative for the chef. I'm sure that long ago cheesecloth was used but modern materials have replaced it. This recipe is authentic and quite good.
