"This dish was incredible and SO easy to make! I switched out the sour cream for plain Greek yogurt to lighten it up a bit and it was incredible. Choose nice thick, meaty mushrooms and you won't miss the meat at all. In fact, I actually prefer this to a version with beef! To go completely vegetarian, use vegetable broth instead of beef broth."
