I love this recipe! I make this chili all of the time. I have mine as is but for my non-vegetarian husband, I grill up knockwursts, sausages or even chicken (whatever is on hand)) and use that almost like a garnish for his bowl. Very happy medium.

I have found that this makes a lot more than 4 servings for us. I now halve the recipe....
