The texture was off-putting for my 2 year old. I sweated 1/2 of an onion and I used 2 tsp mustard instead of a full tbsp. Nothing like a cheesecake--it was fluffier than your typical pumpkin pie. I used 1 can of pumpkin--15 ounces, and I made 1 pie with no filling leftover.
