Everyone in the household loved this recipe. I used pinot grigio instead of vermouth and large peeled and deveined shrimp instead of fish. This has almost become our "spaghetti" in the house because it's so easy and so delicious. I made everything on the Neely's Take Out show one Sunday. Whew... Chinese food is way under priced, first of all. With all that chopping and such, my preparation time felt like it took forever! I really wish I had read the reviews first that it was going to take longer. It kindof ruined my dinner. My slicer cut them less than 1/2 inch and it still took 30 minutes plus to cook. Otherwise, they were good. But PLEASE if you're a time planner in the kitchen like me, it takes longer than 10 minutes, no doubt. Maybe Emeril's oven cooks faster...

I used different ingredients. Mushrooms instead of zucchini. I added chopped roma tomatoes and some bacon bits along with mozzerella and cheddar cheese (instead of goat cheese) at the end. But the technique was spot on! No flipping and it was perfect. It was almost like breakfast pizza! Easy thing to make on a weekend.
