Shared Recipe Tropical Cucumber Salad

"My friend Buffy gave me this recipe. I really didn't think that it would be that great, but it really is! This salad is very light and refreshing and would be the perfect side dish to a light summer meal. I think that it would pair perfectly with grilled salmon or seared tuna. Best if made within an hour or two of serving. Does not keep well ove..."

About Me

Hi, My name is Beth. I truely LOVE to cook. My mother couldn't cook very well at all, so I realized at a young age that I was on my own food wise. My first home ec class in 7th grade changed my life...lol. I learned to fry chicken and make biscuits, and I just took off after that. I've always been able to go to a resturaunt, order something, figure out whats in it, then duplicate it at home. My sister and brother loved me for this when we were kids. But now, my 2 sons are grown, and my daughter is off to college, I also have 3 grand babies to love on and cook for when they come..little Dominic and Kiera love to come over to "Meemaws" house to raid my pickles and cheese. Recently, they have moved to Tennesee, so now I rarely get to enjoy them. My other grandson, Evan, lives in West Virginia. He's into hotdogs and anything that he can dip into ketchup. I miss my babies!
So now, it's just me and Kevin, my boyfriend going on 6 years. He likes to eat, so that's good. I really do miss having a family to cook for. I recently learned to make sushi.. spicy tuna rolls are my favorite. I love trying new things, and it took me years of coaxing to even get me to try sushi, now I'm making it. Who would have known?

Favorite Foods

I love doing holidays like Thanksgiving and Christmas. I also love to do appetizers and fussy types of foods. I sometimes bite off more than I can chew as far as throwing parties is concerned, but it always works out in the end. My favorite food to make is turkey and stuffing, but I have found numerous great recipes here at Recipezaar.. But as far as flavors go...I'm not a dessert type, I don't like really sweet things, but I do love seets with other flavors. My favorite combos are sweet/spicy, sweet/tangy, sweet/salty, spicy/(sour)vinegar, and spicy/creamy. Food textures: I love crunchy and creamy.. not much in between.
I've love to try new foods... I give every food at least 3 tries before I declare to disliking it. So far, my dislikes are chitterlings, liver, okra, collard greens, perch, salmon, lamb, venesin, duck and green bean casserole.
I'd love to try fiddlefern...I have yet to find them in the store though. I also want to get to know beets, celery root, jerusulem artichoke, daikon, argula and winter squash.
