Reviewed Corn Tortelli with Tarragon Butter
"Wow, my guests raved about this dish...said it may be the best pasta dish they have ever had! Since tarragon was no where to be found in my local stores I substituted 2 T of fresh thyme in the filling and 1 T fresh thyme in the sauce. I am not a fan of goat cheese so I substituted c 6 oz of cream cheese for the goat cheese and the mascarpone. I used frozen corn instead of cream corn. The cream cheese gave it plenty of creaminess. It was a sweet flavor and with the delicate homemade pasta...a real winner! The 3 Cups of flour was too much for the 4 eggs so working with the dough was very difficult, next time I will reduce the flour slightly."
