Reviewed Spinach and Bacon Quiche

"This was delicious! I made it for a brunch and it was gobbled up!

I made the recipe as written, and ended up with enough bacon and egg/cream mixture for two 9" quiches! Luckily the pie crusts I bought came in packs of 2, so I just took half the bacon out of the first crust, put in some more spinach, poured half the egg over top and added shredded cheddar because that's what I had on hand. The egg/cream mixture bulks up a lot when you put it in the blender, and it made the eggs nice and fluffy. I cooked the bacon in the oven, so it didn't take much attention, and wilted the spinach over the stove with a few tablespoons of water (make sure you drain it before adding it to the quiche. It was simple and easy to put together, and it will become one of our regular meals. My husband loves it so much that he asked me to teach him to make it so he can have it on nights I'm not home! Thank you, Paula, for another wonderful recipe!"
