My wife loves this meatloaf. She likes to prep it the night before and leave it in the fridge until I pop it in the oven the next day and have it hot and ready when she gets home from work. she doesn't just use beef, either. She uses a "meatloaf mix" of several ground meats (beef, turkey, and lamb I think). The fried onions add great texture. "
