This soup was incredibly easy to make and intensely delicious. The cheddar and sage bread added such a new take on the usual onion soup. If you can, save yourself some tears and have the family help chop up the onions and cry together!! I used a ton of different onions, leeks and shallots. There is a small discrepancy; when Giada does it on the show, she adds the pasta to the pan with the mussels/clams as opposed to making the sauce and pouring it over the pasta as described in the recipe above.
