This recipe is amazing!!! I used a hand mixer as i didn't have a paddle attachment.I also used 2 ,9x13 foil pans and they worked great. Also used half karo syrup and half honey,as per many users.Wonderful bars, great recipe.Made 48 bars/squares,cut them small as they are rich.

Does anyone know what i can use instead for the paddle attachment......I have a small stand mixer with a bowl, but no paddle attachment, only beaters and dough hooks. Please, any suggestions will be helpful,as i just bought all the fixings to make these yummy bars.

buffy82794........buffy,i run a knife(longer blade kitchen knife) around the edge of my spring form pan, gently moving it inwards until it is in the center and i have moved it around the whole cheesecake....then gently slide it onto serving dish.Hope this helps you,i never had luck with parchment paper.

austinbebecakes............ i can't see how you could double the recipe unless you make 2 different batches...My cheesecake came almost to the top of my 9 inch spring form pan,and when cooked it came 1/4 inch over the top.But i am trying to experiment with a smaller size, maybe making 2 cheesecakes out of one recipe batch!! it was that good.I am adding...

Buffy82794........i used a long sharp knife that i ran around the edge and as it lifted,i slid knife in father until it went to the middle, slowly moved pan so as to lift from springform pan.I had trouble cutting the cheesecake as the crust broke when cut with a sharp knife....but persistence paid off.Cut it cold!!! It is worth every second.
