I made this as an accompaniment to a eggplant coconut curry and almost died from happiness. Maranda, you can use a variety of white wines, Chardonney, Sauvignon Blanc, Pinot Grigio, as long as the white wine is dry (dry=not sweet, so no Riesling). I loved the flavor of these, but I cooked them too long, so they ended up a little crispy for my taste. I think if you like cakey-type gingerbread cookies, roll these out a little thicker and don't cook them as long. Either way, though, they have a wonderful flavor; not severe spicy flavor, but not bland either, a really great balance.

I love this recipe. It's very forgiving to changing things, too. More mango? no problem! More chicken? Go for it! Love garlic? Add a little more! I usually serve it with soy sauce from a Chinese market (I hate kikoman, it's insulting) and sticky rice. I've made it countless times. It has a permanent place in my recipe collection.
