Reviewed Tilapia Ceviche
"Oh my my my.... freakin' awesome! I didn't change anything other then adding half a diced red pepper because it sounded good and I didn't know what else to do with it. Lovely balance of flavors; I could've just eaten the ceviche itself, but of course it's delicious on the tostadas. One sneaky tip... use Japanese Mayo if you can get it. (I think"
Reviewed Eggplant In Curry-Coconut Sauce
"I altered this recipe a little bit; I have limited space and tools in corporate housing, so had to adjust for that. I also reduced the amount of time the recipe took. I used butter, not ghee, and reduced the amount used by half. I made the eggplant first (only one pan) using butter and olive oil combo, set aside, then made sauce. I only used 1"
Reviewed Risotto in a Lemon Cup
"I made this as an accompaniment to a eggplant coconut curry and almost died from happiness. Maranda, you can use a variety of white wines, Chardonney, Sauvignon Blanc, Pinot Grigio, as long as the white wine is dry (dry=not sweet, so no Riesling). The lemon risotto makes an incredible addition to my risotto recipes. Yum!"
Reviewed Roast Beef with Marsala Gravy
"I'm a little surprised by the negative reviews on this one. Not sure what the deal is, but for me, this recipe was great. I think good ingredients are key with this recipe. I don't care for bottom round, but this recipe will work with really any beef roast, as the recipe states. I think she chose bottom round because it's cheaper ie $10 dinner"
Reviewed Shortbread Cookies
"I feel like shortbread cookies just by their nature can be a little cantankerous especially if the dry to wet ingredient ratio is a little off. Sometimes I swear it's the weather. I had to play with this recipe a bit more then I liked to get it to work. I added little sprinkles of water to get the dough to hold together a little better, as it w"
Reviewed Marilyn O'Reilly's Irish Soda Bread
"I made this last year for St. Patrick's Day and will be making it again this year... although family members have put in orders for their own loaf, so I'll be a baking fiend! :) At first I thought I lost this recipe and almost died. This is a total keeper! Oh, and I like using currants instead of raisins."
Reviewed Black Forbidden Rice with Peaches and Snap Peas
"I just bought black forbidden rice today on a whim because it was the first time I ever saw it in the market. I didn't really know what to do with it, but when I found this recipe, I just happened to have all other ingredients on hand and... wow! what an exciting find! I don't know how Giada does it, but it's delicious!"
Reviewed Nutella Egg Cream
"Yet another wonderful use for nutella. This reminds me of the chocolate sodas we used to have as little kids... sometimes we'd even have ice cream in them, too. Nutella can be a little pesky in that it doesn't always emulsify completely, but the flavor is always super tasty. You can use regular chocolate syrup or really any flavored syrup that sounds good; I think this makes a great base recipe for all kinds of delicious drinks!
