"Mine came out perfect! But..I think it's because I didn't use olive oil. I read the reviews before hand and decided to use an oil with a higher smoke point. I used Canola oil. I kept it on a medium heat and used thin cuts of pork rather than thick and they came out juicy, tender, and with a perfect crunchy crust. I also pan-fried one at a time ""

"'Tannercb' - Did you not add baking powder?...maybe that would help? I followed the recipe exactly as well and wow!....these were just heaven. My husband and I couldn't keep our hands off of them. I usually hate lemony desserts, but these have changed me..yumm!! :)
