About Me

Became Mr Mom when head injury at work ended my career. I've been learning to cook for the past 8 years. There times my meals are delicious, and at other times when they are not well accepted. I'm not a recipie cookie, I read recipies to learn what items can be made together, then I use that knowledge with the spices my family enjoys to create a meal. I am Italian 100% my mother was a professional cook in the 50's cooking Northern Italian, much of which is in vogue today. She left few recipies and much of what I remember came from experimenting. I have not succeeded in capturing her best servings, but I have come a long way. I am married 32 years with a lovely wife and three children.

Favorite Foods

Ethnic foods: Italian, Japanese, German, Mexican, Cajun, Tai, Chinese and many classic (old) dishes. I have attempted to make simple meals well, a friend many years ago told me that "peasants eat simply, but they always eat well." He was right!

I bake bread, ciabatta -means slipper (italian flat bread) and plain Italian. I hunt and cook wild mushrooms, cook over campfire or with dutch oven. Cook venison, and many wild meats like elk and caribou.
