Reviewed succotash salad

I saw this on "The Kitchen" this morning & since I had a cookout to attend tonight I decided to make it. I think the earthiness and freshness of the vegetables. It's a good cleanser to palette and tastes like summer.

I did find that the amount of dressing in the instructions was a little lite for my taste so I made additional....

Excellent taste. Very bright and flavorful. Not heavy, despite the pasta. The dressing is the star; I will be adding to my dressing rotation for salads.

I agree with Mbbrogan, if using sun dried tomatoes packed in oil I would reduct the olive oil initially and add more if needed.

Overall, I think this is a good dish. I made it for potluck at the office and the flavors were good. It does require some forethought and cooking it the morning of the potluck was a challenge. I would recommend this more for a lazy weekend.
