Reviewed Banana Crunch Muffins

"This is an awesome base muffin recipe! I only had bananas and sliced almonds today. I sprinkled tops with raw sugar. I just finished eating 2, my husband 3 (and he wants another one but is watching his weight. So delicious!

I didn't have any muffin liners today so used cooking spray & had success in getting them out w/o them breaking in half. I think the key is to not fill the muffin cups more than 3/4 full and use a rubber spatula around the outside of each muffin after it's done cooking. If you do so, you end up with 24 decent sized muffins vs 18 extra large.

Ina, as always, thank you for sharing your delicious recipes. You take the scariness out of cooking for me. I watch your shows and think, I can do that, and I can. I've gone from being a non-cooker to loving to cook! You are a real inspiration! nutritional breakdown of this recipe: 239 cal, 33g carbs, 3g protein, 11g fat (5 saturated and 1.33 fiber. It is loaded w/Vitamin A and potassium.

The option to make batter ahead overnight is also such an awesome bonus when entertaining early in the morning.

About Me

I'm a mom w/5 boys and 2 girls.  Most of them are grown now, so it's more like cooking for 9 adults than kids.  I used to not be a very good cook until I started watching Ina Garten (Barefoot Contessa).  Now I'n a cooking enthusiast!  My favorite chefs are Ina Garten, Giada DeLaurentis, Jaime Oliver and Laura Calder.  I'm waiting for Aarti Party to start up because I love indian food, so hoping to add her to my list of favorites.
