Reviewed Pumpkin Bread

"Great recipe. Fresh shredded pumpkin is really easy. It does not mean RAW. Cut the pumpkin in half from top to bottom (not side to side) and scrape out seeds and "hair." Place cut side down on a cookie sheet lined with parchment paper and bake at 300 degrees till soft. Cool and dig out the "shredded" pumpkin inside with a lg spoon. Smash it up a bit. Now it is ready for any recipe calling for canned or fresh pumpkin. The advantage in roasting it for one is it's easier but also, by not using water to steam or boil it, you retain all that great flavor and there is no added wetness.
