Made this sauce on Sunday. It was surprisingly delicious and I am Italian and make the bolognese with the vegetable trinity. The only thing I added was 1 onion and a little extra oregano, in all good conscience I could not make a pasta sauce without onion....Will definitely make this again, great sauce in a pinch. It was good for a week day dinner. I substituted the sour cream for fat free sour cream to save calories and it still tasted fine. The noodles are not great, they were runny/watery and flavourless. Best to eat this dish with mashed potatoes or another side of pasta. "

I have been looking for a squash soup recipe for quite a while now and this one certainly delivered on flavour without the calories! If you are a Weight Watcher like me, this soup translates to 2 points per cup and its filling and very YUMMY! Another great recipe, thanks Giada!
