This was a very easy recipe but I have to agree with others that the flavor was very mild. I really wish I could bring out the apple cider flavor more, maybe next time I will add some apple cider vinegar and some extra cinnamon.

This recipe was delicious but it did not taste like pumpkin bread to me, more reminiscent of zucchini bread. Next time I will add pumpkin spice instead of just cinnamon. My kids and I had a great time making it though, it was fun to work with a real pumpkin!

This was a fantastic and easy dinner. I used salmon instead of cod because that is what I had on hand and it turned our wonderful. Salmon goes very well with fennel and dill.
