"I followed the recipe, however didn't use butternut squash. I used the salt,butter and stock, saffron amounts as indicated. I thought they were just right. It probably took another 10 minutes extra for the risotto to cook thoroughly."

"So, I used store chicken stock and at first had only 20 oz of peas, oops math error added the next 10 oz , used a blender, crispy prosciutto on top and Cascadian farms peas. Awesome. "I used some leftover roast chicken, followed the recipe-however I did use the tips from other reviewers deglazed the pan with chicken broth and let the potatoes steam in the onions for about 20-30 minutes. "Followed recipe, however i took the advice of others and marinated it for 1 and 1/2 hours. The skewers turned out perfectly. Moist and the satay sauce was great - although it seemed a little oily perhaps that was the peanut butter I used. I made more chicken and still had tons of sauce left over."
