Reviewed Potato Gnocchi

The recipe came together very well and was easy if you have the time. Count on a full two hours before dinner time.
However, the gnocchi itself was a little bland. Plenty of salt in the water didn't seem to help. I'm not sure what I'll do to fix this on my next attempt other than add more salt in the dough itself.

I used cilantro in lieu of spinach and it came out amazing. No one even noticed the cilantro, even the cilantro haters. It was creamy and perfect, served over orchiette. A nice twist to a typical pesto. I did use a little more cheese that the recipe called for though.""

Everyone at my party absolutely loved this dish. A couple of them went home with the recipe.
I took away one star because I think some of the ingredient ratios are a bit off. For example, I doubled the corn recipe because two kernels didn't appear to be nearly enough. Also, next time I will put less cheese, it was way too stringy and not...

This is a very tough recipe but if you have a pasta attachment on a stand mixer it will work well. If you plan to cut by hand this probably isn't the recipe for you. Add a little olive oil to help with the kneading process- it makes a little less tough.
I swore this was going to be a disaster of a meal because it was so dry and hard to work...
