Reviewed Carolyn's Gelatin Cheesecake
"I was actually pleasantly surprised with this. I followed the recipe exactly and found that although I generally am not a huge fan of the artificial sweetener flavor that you often get in Jello mixes, the cottage cheese mellows it out very nicely. For those who have had issues in the past comments with the crust getting soggy, make sure you do two things: first make sure you dissolve the gelatin mixes in the hot water completely before you add the cool water, this ensures a homogeneous mixture of the gelatin matrix which helps to keep the liquid together. Second, if you look at the recipe, you'll see Paula calls for two packets of mix and one cup each hot and cold water. If you follow the directions on the box, each packet calls for that amount, so you are doubling the amount of mix without increasing the water. Hope that helps everyone who's had issues in the past!
Reviewed Thousand Island Dressing
"I absolutely loved this dressing the first time I made it's become my go to dressing for almost any type of salad and I think it works better with a Reuben than a traditional thousand island dressing. One thing that I've begun to do that makes it a little less strong on the harsh onion notes is to saute the onions, olives and jalapeños in the oil. It sweetens the onion a bit to keep the flavor but relieve a little of the harsh bite. It also adds a nice smoky flavor from the jalapeños being cooked which really brings the whole thing together. Hope it helps!!

"I really like this recipe made with applesauce in lieu of the vegetable oil (1:1 ratio) and half whole-wheat flour, adding an extra teaspoon of cinnamon plus a teaspoon of all spice and a half teaspoon of ginger. It's a slightly different flavor but I really like it this way. Hope someone enjoys it!

Favorite Shows: Good Eats and Paula's Home Cooking are definitely up there, but I love all the ethnically themed shows as well (Everyday Italian, Aarti Party etc) and Unwrapped can entertain me for hours :)
