Delish as usual for Ina. Altho you can certainly avoid the cream and use the pasta water with the truffle butter (I used whipped) which makes this decadent dish, dare I say it, relatively light on calories!"

Oh My God.

This is insane good - not difficult. A bit of prep but really unbelievable. I owe the best meals I've made for friends and family for the past 8-years to Ina. Try her Scallops Gratin as well... also I bought frozen lobster pieces in bulk from Costco (I am in MN - they worked just fine and cost effective.""

Another alteration:

I had two small celery roots which I roasted with 1lb Yukon Gold and only one leek so used 1/2 white onion. Also I had no arugula but had fresh parsley and dried French tarragon and that worked just fine. Also subbed milk and sour cream - used what I had. Delicious. The celery root added another (delicious)...
