Reviewed Grandma Yearwood's Coconut Cake with Coconut Lemon Glaze

"I'm not a baker by any stretch of the imagination but I wanted to try this. It was not pretty. I had trouble getting it out of the pan, even though it was buttered and floured and I followed the recipe to the letter. Way too much glaze...IF I ever make it again I'll just make a powdered sugar/lemon glaze. I'm not a huge coconut fan so what was in "

About Me

In my previous life I spent many years working as a legal secretary. Those days are behind me but I do enjoy dabbling in it still....just not the full time slave I used to be. I love to cook, but as my spousal equivalent travels so much I spend a lot of time alone without willing victims to subject to my culinary adventures. I have taken to foisting it upon friends and neighbors...everyone knows it's no fun to cook just for yourself. Even though I have no children, for whatever reason I always cook like I'm feeding a family of at least four, if not six. I dearly love going home to visit because then I get to cook for the family. As soon as I hit town they start calling and want to know when "Enchilada Night" is. This is certain to bring all the family members together for my enchiladas...not to mention they love the idea of a free meal.

Favorite Foods

Anything that incorporates pasta! Italian and Mexican are probably my favorite...its all those carbs and cheese I guess! I'm probably most famous for my enchiladas! I'm the product of a Texan father and German mother, I didn't have a chance at normalcy, whatever that is, ha ha...my German grandmother lived with us my whole life and my upbringing was far from traditional. I was an Army brat and spent my formative years in Germany until my Dad retired. I don't have a favorite restaurant. I enjoy trying all kinds of them and I have many favorites, each for a respective dish of theirs.
