Reviewed Double-Fried French Fries

"kljncm_9051924, what "gives" is called marketing. As Emeril's popularity wanes and Guy's climb's, the "creator" of the recipe is changed to keep it on a front burner. My grandmother made this with the following changes: no thermometer, used cast iron skillet, used lard, used table salt. Best darn fries ever.

"dlmjcm_9051942, what gives is called marketing. As emeril's popularity declines and Guy's climbs, changing the creator of the recipe keeps it on a front burner. With the exception of using a "deep fry" thermometer (she didn't use a thermometer) and stock pot (she used a cast iron skillet), my grandmother used this recipe in the 50's and 60's. She said her mother gave her the recipe. Better than any restaurant's fries by a tasty mile.
